Walnut Crusted Apple Crisp


I love this recipe, because it’s such an easy dessert recipe for social gatherings! It’s a fan favorite and sure to please.

Walnut Crusted Apple Crisp

INGREDIENTS

For the apples:

  • 5 medium sized apples (I used fugi)

  • 1 tbsp coconut nectar (or maple syrup)

  • 1 tbsp lemon juice

  • 3 tbsp water

  • 2 tsp ground cinnamon

  • 1 tsp ground nutmeg

Toppings:

  • 1 cup organic gluten free oats

  • 1/2 cup blanched almond flour

  • 1 tbsp coconut flour

  • 2 1/2 tsp ground cinnamon

  • 1/4 cup melted unrefined coconut oil (use butter or ghee, if not making vegan)

  • 3 tbsp coconut nectar (or maple syrup)

  • dash of salt

  • 1 cup chopped walnuts (or nut of choice)


INSTRUCTIONS

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Mix ingredients for the apples together, adding in the apples last, and coating with the complete mixture.

  3. Place apple mixture in an 8x8 dish.

  4. Mix the toppings into the empty bowl (reduce-reuse).

  5. Pulse walnuts in a food processor and add the toppings to your baking dish.

  6. Bake for approximately 40-50 minutes, until your topping is brown and crisp. Set aside to cool and enjoy!

    Of course, the best way to enjoy any helping of apple crisp is with some vanilla ice cream! I added a spoonful of So Delicious vanilla bean vegan ice cream, which included the perfect amount of goodness to melt into this treat.
