Raw Vegan Taco Salad


Some of the biggest misconceptions about plant-based eating?

  • Eating vegetables is boring!

  • It’s too expensive.

  • I don’t want to eat salads every day, because I’m always hungry.

Truth is, you have to be smart about what you’re eating.  Make sure to incorporate some quality plant-based proteins, healthy fats and 2-3 cups of veggies at every meal to keep you feeling satiated.

And keep your cabinets stocked with lots of spices (e.g. garlic, pepper, turmeric, Indian spices, etc.), healthy dressings, curry’s and sauces to keep your palate satisfied.

And sometimes you can get creative and think outside the box, without breaking the bank, like with this recipe!

Here’s a recipe to get you started!

Taco Salad

INGREDIENTS

  • 2 cups romaine

  • Black beans

  • Pico de galla salsa (pre-made or make your own)

  • Cilantro

  • 1/3 avocado

  • Walnut “taco filling” (1 cup walnuts seasoned with cumin, coriander, chili powder and organic tamari.  Blend in food processed and serve!


INSTRUCTIONS

  1. Make your taco filling, add all of your ingredients together and enjoy!
